What are the main Changes between Impetus & Baroque?

Measurement unit changes from fixed unit to one based on unit frontage.

Opportunity interactions are replaced by individual unit reactions limited by frequency type of unit rather than nature of opportunity.

Morale system is very different with units being able to withdraw from the field to avoid being broken.

There are less unit types but a lot more add on flavour skins that changes the strength and abilities of a unit.

There are no large units or groups - each base is larger than in Impetus and generally reflects a battalia or tercio sized unit.

Lots of other tweaks but I think those are the big ones - sure someone will add in any I've missed. The core combat and movement mechanisms are the same.
