I am assuming gentle hills block shooting if the hill is between the shooter and the target.

The mention in the rules about 1H visibility only refers to wooded hills? (Page 17)

That there are no crests or other mechanics pertaining to hills for shooting?

it is for all hills, assuming that there are a crest or more crests.
