What were these exactly?

Yes.

I am also just starting with this period. From what I have read:

Bucellarii are the private army of generals, recruited and paid personally.
Kavallarioi are the cavalry of the empire.

Both are likely to be foreign mercenaries but both are equipped and armed as Byzantines. Phil Barker in his The Armies and Enemies of Imperial Rome says the Bucellarii had tufts on their shoulders as well as the one on.the helmet worn by the Kavallarioi. Im not sure I really believe him but never-the-less I shall distinguish the two on this way.

Here's my Justinian era Boukellaroi. They are from Aventine Miniatures, Early Byzantine range.
